Vinification and Aging
Manual harvest in 20 kg crates. Fermentation takes place in stainless steel tanks with a percentage of whole clusters. After alcoholic fermentation, the wine is aged in used 500L French oak barrels. Spontaneous malolactic fermentation occurs, contributing to the complexity and smoothness of the wine. No cold stabilization process is applied, and the wine is only lightly filtered before being bottled, preserving the maximum of its natural characteristics.
